Cinnamon Rolls

I used to make these with my mom for Christmas every year, now that she is gone, my daughter makes them with me and they are a holiday tradition for sure.

  • 1 package yellow cake mix 
  • 2 packages dry yeast (I use rapid rise)
  • 5 cups all-purpose flour
  • 2 ½ cups very warm water
  • ½ cup pecans (I omit these)
  • 4 T light corn syrup
  • 4T brown sugar
  • Butter or margarine melted
  • Cinnamon
  • Sugar

Combine cake mix, yeast, and flour.

Stir in warm water.

Let rise until double.

Divide dough into two sections, and roll each into a rectangle on a floured surface. Spread with melted butter.

Sprinkle with cinnamon and sugar.  Spread with ½ cup nuts (optional).

Roll jelly-roll style and slice.  Lay on greased cookie sheets.  Let rise until double. (hint, if you layer your baking dishes with non-stick aluminum foil you won’t have a big mess)

Heat corn syrup, brown sugar, and ½ cup butter until butter is melted.  I like lots of sugary goodness so I double the recipe for the topping.

Sprinkle with pecans over rolls and dribble with warm topping.

Bake in pre-heated 375-degree oven for 25-30 minutes.
